Sweet, perfumed apricots simmered down into luscious, thick compote, outside Nantes in north-west France.
We love this organic apricot compote for breakfast, spooned over nutty granola or spread on our fruit bread.
For a simple pudding, serve with fresh yoghurt, double cream or ice-cream. This apricot compote is delicious with savoury dishes too; try alongside pork or lamb, well-seasoned chops or a roasted joint.
