Tender lamb and its perfect partner – fresh mint- slowly simmered with spring vegetables in a seasonal casserole. Delicious with crushed new potatoes. Pour into a saucepan and heat for 10 minutes over a medium heat, stirring occasionally – don’t let it boil. This is a guideline only as appliances may vary.
